Initially, the potatoes are 99% water and 1% solid matter. This means the solid matter weighs 1% of the total weight.

When they dehydrate to 98% water, it implies that the solid matter now constitutes 2% of the weight (100% - 98% water). Since the solid matter still weighs the same, it now represents 2% of the new weight.

If 2% of the new weight is equivalent to the original weight of the solid matter, then 98% (the remaining water content) must represent the other half. Therefore, the new weight is half of the original weight, which is 50kg in this case.
